Vegan food can contribute to healthy lifestyle and it can prevent a number of illnesses. Vegan menu in university canteens has been introduced in Hungary for the first time at the University of Debrecen. After the summer test period, the supply can be expanded in the new academic year.According to Zsuzsanna Kónya Szalayné, head of the Dietetics Department of the University of Debrecen, a number of diseases, such as cardiovascular problems that are the leading cause of death in our country, or the development of already existing illnesses can be prevented by eating many kinds of vegetables and fruits regularly. She says that unfortunately, only a few people eat the recommended daily quantity, which is at least half a kilo of partly raw vegetables and fruits, sometimes supplemented with oilseeds.
Now, in the university canteens of the Faculty of Engineering and Lovarda, a new vegan menu has been introduced, which is a new and more innovative way of introducing fresh fruits, vegetables and seeds into the diets of university students. From now on, people who visit the canteens can order such special vegan dishes as vegetable saucepan with tomato, oregano and zucchini spaghetti or vegan Greek “meat balls” with tzatziki sauce.
The newly introduced menu has the advantage that it can be integrated into many diets and offers a choice for those who are not vegan, but want to eat healthier.
Vegan food (soup and main course) is available once a week at the canteens of the Faculty of Engineering and Lovarda. The dishes are made based on István Varga raw vegan chef’s recipes.
The University of Debrecen is the first in the country to recognize the ever-increasing demand for vegan food and they made it available at their university canteens.
Although in the summer season, canteens of the Faculty of Engineering and Lovarda will be closed, home delivery will work, and at the opening of the autumn semester, both canteens will have a free tasting session so that new students can taste special vegan food.
